Ingredients
1.5 cups Thai glutinous rice (sticky rice)
1 cup full-fat coconut milk
1/2 cup granulated sugar
1/2 teaspoon salt
2 large ripe mangoes (Ataulfo or Nam Dok Mai)
1 tablespoon toasted sesame seeds (for garnish)
Optional: Crispy mung beans for topping
Instructions
Step 1: Soak the glutinous rice in water for at least 4 hours or overnight, then drain and rinse well.
Step 2: Steam the rice for 20-25 minutes until tender and translucent.
Step 3: In a small saucepan, heat coconut milk, sugar, and salt until dissolved into a smooth sauce.
Step 4: Mix 2/3 of the sauce into the hot rice, cover, and let rest for 20 minutes.
Step 5: Peel and slice mangoes into thin spears.
Step 6: Spread rice on a plastic-wrapped mat, place mango in the center, and roll tightly.
Step 7: Slice into rounds, drizzle with remaining sauce, and sprinkle with sesame seeds.
Notes
Ensure the rice is specifically labeled as 'Glutinous' or 'Sweet' rice for the correct sticky texture.
