2.5 lbs sweet potatoes, peeled (optional) and cut into 1-inch cubes
3 tablespoons olive oil
3 tablespoons honey (or maple syrup for vegan option)
4 cloves garlic, minced
1 tablespoon fresh rosemary, finely chopped
1/2 teaspoon sea salt, or to taste
1/4 teaspoon black pepper, freshly ground, or to taste
1/2 cup pecans, roughly chopped (optional, for adding in the last 5 minutes of roasting)


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a large bowl, whisk together the olive oil, honey (or maple syrup), minced garlic, chopped fresh rosemary, salt, and black pepper until well combined.
Step 3: Add the diced sweet potatoes to the bowl. Toss thoroughly until all the sweet potato cubes are evenly coated with the honey-garlic mixture.
Step 4: Spread the coated sweet potatoes in a single layer on the prepared baking sheet. Ensure they are not overcrowded; use a second baking sheet if necessary to allow them to roast rather than steam.
Step 5: Roast for 25-30 minutes, flipping the sweet potatoes halfway through the cooking time (around 15 minutes), until they are tender when pierced with a fork and beautifully caramelized around the edges.
Step 6: If using pecans, sprinkle them over the sweet potatoes during the last 5 minutes of roasting for a light toast and added crunch.

Notes
