Ingredients
1 9-inch unbaked pie crust
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 tablespoon yellow cornmeal
1/2 teaspoon fine salt
3/4 cup high-quality honey
3 large eggs
1/2 cup heavy cream
2 teaspoons vanilla bean paste
1 tablespoon flaky sea salt (for garnish)
Instructions
Step 1: Preheat oven to 350°F and blind-bake the pie crust for 10 minutes.
Step 2: In a large bowl, whisk sugar, cornmeal, and fine salt into the melted butter.
Step 3: Whisk in the honey and vanilla bean paste until smooth.
Step 4: Add eggs one at a time, whisking gently after each addition.
Step 5: Fold in the heavy cream and pour the mixture into the prepared crust.
Step 6: Bake for 45-50 minutes until the edges are golden and the center jiggles slightly.
Step 7: Cool completely on a wire rack, then sprinkle with flaky sea salt before serving.
