Ingredients
1 lb lean ground beef (or turkey/chicken)
1 packet (1 oz) taco seasoning
1/4 cup water
1 head romaine or iceberg lettuce, chopped
1 cup cherry tomatoes, halved or diced large tomatoes
1/2 cup canned black beans, rinsed and drained
1/2 cup canned corn, drained
1/4 cup red onion, finely diced
1 medium avocado, diced
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup sour cream or plain Greek yogurt
1/2 cup salsa
2 cups crushed tortilla chips or baked tortilla strips
Optional: fresh cilantro, pickled jalapeños, lime wedges for serving
For the Creamy Cilantro-Lime Dressing (Optional):
1/2 cup mayonnaise or sour cream
1/4 cup fresh cilantro, chopped
2 tablespoons lime juice
1 clove garlic, minced
1/2 teaspoon cumin
Salt and pepper to taste
Instructions
Step 1: Brown the meat. In a large skillet over medium-high heat, cook the ground beef, breaking it up with a spoon, until fully browned. Drain any excess grease.
Step 2: Season the meat. Stir in the taco seasoning and 1/4 cup water. Simmer for 2-3 minutes, allowing the sauce to thicken. Remove from heat.
Step 3: Prepare the dressing (if using homemade). In a small bowl, whisk together mayonnaise (or sour cream), chopped cilantro, lime juice, minced garlic, cumin, salt, and pepper until well combined.
Step 4: Assemble the salad. In individual bowls or a large serving platter, start with a bed of chopped lettuce.
Step 5: Layer the toppings. Evenly distribute the seasoned ground beef over the lettuce. Add cherry tomatoes, black beans, corn, red onion, avocado, and shredded cheese.
