Baked Burrata with Roasted Tomatoes

Description

An incredibly easy yet elegant appetizer featuring creamy burrata nestled in a bed of sweet, caramelized roasted cherry tomatoes with garlic and herbs. Perfect for entertaining or a cozy night in.


Ingredients

Scale

1.5 lbs (approx. 680g) cherry or grape tomatoes
3 cloves garlic, thinly sliced or minced
3 tablespoons extra virgin olive oil
1 teaspoon dried oregano (or Italian seasoning)
1/2 teaspoon salt
1/4 teaspoon black pepper
2 (4 oz / 113g each) balls burrata cheese, drained
1/4 cup fresh basil leaves, torn or chopped, for garnish
Crusty bread or baguette, for serving


Instructions

Step 1: Preheat your oven to 400°F (200°C). In a medium baking dish (an 8x8 inch or similar sized dish works well), combine the cherry or grape tomatoes, sliced garlic, extra virgin olive oil, dried oregano, salt, and black pepper. Toss everything gently to ensure the tomatoes are evenly coated.
Step 2: Spread the seasoned tomatoes in a single layer in the baking dish. Roast in the preheated oven for 20-25 minutes, or until the tomatoes have softened, burst, and started to caramelize around the edges.
Step 3: Carefully remove the baking dish from the oven. Make small wells among the roasted tomatoes and nestle the burrata balls into the dish. Return the dish to the oven and bake for an additional 5-7 minutes, or until the burrata is warmed through and just beginning to soften and slightly melt around the edges.
Step 4: Once removed from the oven, immediately sprinkle with fresh basil leaves. Drizzle with balsamic glaze if desired.
Step 5: Serve the baked burrata roasted tomato immediately, directly from the baking dish, with plenty of crusty bread or crostini for dipping.

Notes

For best results, use fresh, high-quality burrata and good extra virgin olive oil. Don't overbake the burrata; you want it warm and creamy, not fully melted. Serve immediately with plenty of crusty bread for dipping.
