Description

An incredibly easy and comforting slow cooker recipe featuring tender potatoes and savory ham in a rich, creamy cheese sauce, perfect for a fuss-free family meal or using up leftover ham.


Ingredients

2 lbs Yukon Gold or red potatoes, peeled and diced into 1-inch cubes
2 cups cooked ham, diced (about 1/2 to 3/4 inch pieces)
1 (10.5 ounce) can cream of chicken soup
1 cup milk (whole or 2%)
4 ounces cream cheese, softened
1.5 cups sharp cheddar cheese, shredded, divided
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp black pepper
1/4 tsp salt (adjust to taste, ham can be salty)


Instructions

Step 1: Lightly grease the inside of a 6-quart slow cooker with cooking spray or butter.
Step 2: In a medium mixing bowl, whisk together the cream of chicken soup, milk, softened cream cheese, garlic powder, onion powder, black pepper, and salt until smooth.
Step 3: Place half of the diced potatoes evenly on the bottom of the slow cooker. Top with half of the diced ham.
Step 4: Pour half of the creamy soup mixture over the ham and potatoes. Sprinkle with 3/4 cup of the shredded cheddar cheese.
Step 5: Repeat the layers with the remaining potatoes, ham, and soup mixture. Top with the remaining 3/4 cup of shredded cheddar cheese.
Step 6: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are fork-tender and the sauce is bubbly and hot.
Step 7: Gently stir the Creamy Crockpot Ham Potatoes before serving to combine the melted cheese and sauce evenly. Serve warm.

Notes

For best results, rinse potatoes thoroughly after dicing to remove excess starch, which can make the sauce gummy. Adjust salt according to the saltiness of your ham. For a little extra flavor, you can sauté the diced ham briefly before adding it to the slow cooker, but it's not necessary.
