2 slices soft white sandwich bread
1-2 large, ripe heirloom or beefsteak tomatoes
2-3 tablespoons full-fat mayonnaise (Duke's or Hellmann's recommended)

Freshly ground black pepper, to taste


Instructions

Step 1: Select your tomatoes. Choose the ripest, most fragrant tomatoes available. Farmers' market tomatoes are ideal.
Step 2: Prepare the tomatoes. Wash and slice the tomatoes into 1/4 to 1/2-inch thick rounds. Sprinkle both sides of the slices with a generous pinch of salt. Let them sit on a wire rack over a plate or paper towels for 10-15 minutes to draw out excess moisture.
Step 3: Prepare the bread. Lightly toast the bread slices if desired, just until golden. This adds a slight crunch and helps prevent sogginess.
Step 4: Apply the mayonnaise. Generously spread a thick layer of full-fat mayonnaise on one side of each toasted bread slice, ensuring it covers the entire surface.
Step 5: Assemble the sandwich. Arrange the salted tomato slices on one piece of mayo-coated bread, overlapping slightly to cover the surface. Season with freshly ground black pepper to taste.
Step 6: Top it off. Place the second piece of mayo-coated bread on top, mayonnaise-side down. Gently press down on the sandwich.
Step 7: Serve immediately. Slice the sandwich in half, diagonally or straight across, and enjoy the freshest taste of summer!
