Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup light brown sugar, packed
1 large egg
1 tsp pure vanilla extract
2.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1.5 cups fresh mango, finely diced
1 tbsp lime zest
Instructions
Step 1: Preheat oven to 350°F and line baking sheets with parchment paper.
Step 2: Cream butter and both sugars until light and fluffy.
Step 3: Mix in the egg and vanilla extract until smooth.
Step 4: Whisk together flour, baking soda, and salt, then gradually add to the wet ingredients.
Step 5: Gently fold in diced mango and lime zest with a spatula.
Step 6: Chill dough in the refrigerator for 30 minutes.
Step 7: Scoop tablespoons of dough onto sheets, 2 inches apart.
Step 8: Bake for 10-12 minutes until edges are golden.
Step 9: Cool on sheets for 5 minutes, then move to a wire rack.
