Stunning purple cookies with a fudgy center and a creamy coconut macapuno filling.
Ingredients
2 cups all-purpose flour
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1/2 cup ube halaya (purple yam jam)
1 teaspoon ube extract
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup powdered sugar (for rolling)
1/4 cup granulated sugar (for rolling)
4 oz cream cheese, softened (filling)
1/4 cup macapuno strings, chopped (filling)
Instructions
Step 1: Cream softened butter and 3/4 cup granulated sugar until light and fluffy.
Step 2: Mix in the egg, ube halaya, and ube extract until the color is uniform.
Step 3: Sift together flour, baking powder, and salt, then gradually add to the wet ingredients.
Step 4: Cover and chill the dough for at least 4 hours to ensure proper crinkling.
Step 5: Roll tablespoon-sized balls of dough in granulated sugar, then powdered sugar.
Step 6: Bake at 350°F for 10-12 minutes and cool completely on a wire rack.
Step 7: Whip cream cheese and macapuno together, then sandwich the filling between two cookies.
Notes
Ensure the dough is very cold before rolling to prevent the powdered sugar from melting.
