Description

This festive quick bread combines the rich, creamy flavor of eggnog with a hint of vanilla, topped with a sweet, buttery crumb for the perfect holiday treat.


Ingredients

1 3/4 cups all-purpose flour
1/2 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
1 cup eggnog
1 large egg
1/4 cup vegetable oil (or melted butter)
1 teaspoon vanilla extract
For the Crumb Topping:
1/2 cup all-purpose flour
1/4 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 cup cold unsalted butter, cut into small pieces


Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line with parchment paper.
Step 2: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, nutmeg, and salt. Set aside.
Step 3: In a separate medium bowl, whisk together the eggnog, egg, vegetable oil (or melted butter), and vanilla extract until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon just until combined. Be careful not to overmix; a few lumps are okay.
Step 5: To make the crumb topping, in a small bowl, combine the flour, brown sugar, and cinnamon. Add the cold butter pieces. Use your fingertips or a pastry blender to cut the butter into the dry ingredients until coarse crumbs form.
Step 6: Pour the bread batter into the prepared loaf pan and spread evenly. Sprinkle the crumb topping generously over the batter.
Step 7: Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean. If the topping starts to brown too quickly, you can loosely tent the loaf with aluminum foil.
Step 8: Once baked, remove the loaf from the oven and let it cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely. Slice and serve warm or at room temperature.

Notes

For an extra touch, you can add 1/2 cup of chopped pecans or walnuts to the batter. A light dusting of powdered sugar over the cooled loaf also adds a beautiful finish. Ensure your eggnog is at room temperature for a smoother batter consistency.
