A delightful and refreshing summer salad bursting with fresh berries, creamy avocado, crunchy nuts, and a zesty honey-lime vinaigrette. Perfect as a light lunch or a vibrant side dish.
Ingredients
6 cups fresh mixed greens (spinach, spring mix, or a combination)
1 cup fresh strawberries, sliced
1 cup fresh blueberries
1/2 cup fresh raspberries
1 ripe avocado, diced
1/2 cup pecans or walnuts, lightly toasted
1/4 cup red onion, thinly sliced (optional)
For the Honey-Lime Vinaigrette:
1/4 cup extra virgin olive oil
2 tablespoons fresh lime juice
1 tablespoon honey (or maple syrup for vegan)
1 teaspoon Dijon mustard
Salt and freshly ground black pepper to taste
Instructions
Step 1: Prepare the greens. Gently wash and thoroughly dry your mixed greens. Place them in a large salad bowl.
Step 2: Prepare the fruit and avocado. Wash the berries and pat them dry. Slice the strawberries. Dice the avocado. Add the sliced strawberries, blueberries, raspberries, and diced avocado to the bowl with the greens. If using, add the thinly sliced red onion.
Step 3: Toast the nuts (optional). In a dry skillet over medium-low heat, lightly toast the pecans or walnuts for 3-5 minutes until fragrant, stirring occasionally. Be careful not to burn them. Let them cool slightly. Add them to the salad bowl.
Step 4: Make the vinaigrette. In a small bowl or jar with a lid, combine the extra virgin olive oil, fresh lime juice, honey, and Dijon mustard. Whisk vigorously or shake well until emulsified. Season with salt and freshly ground black pepper to taste.
Step 5: Dress and serve. Just before serving, pour the desired amount of vinaigrette over the salad. Gently toss to combine all ingredients, ensuring everything is lightly coated. Serve immediately and enjoy this delightful addition to your collection of salad recipes!
Notes
For best results, prepare the dressing ahead of time and store it in the fridge. Add the dressing just before serving to keep the greens crisp. If you don't have fresh berries, frozen (thawed) can work in a pinch, though fresh is always preferred for texture.
