Ingredients
100g kataifi pastry (frozen, thawed)
2 tbsp unsalted butter or ghee, melted
1.5 cups shelled, unsalted pistachios
2 tbsp neutral oil (like grapeseed or coconut oil)
2 tbsp powdered sugar
Pinch of salt
400g high-quality dark or milk chocolate (50-70% cocoa), chopped
Instructions
Step 1: Prepare the Kataifi. Thaw your kataifi pastry. Gently pull the strands apart with your fingers to separate them. Melt 2 tablespoons of butter or ghee. In a large pan over medium heat, add the melted butter and then the kataifi. Toast, stirring constantly, until golden brown and crispy, about 7-10 minutes. Set aside to cool completely.
Step 2: Make the Pistachio Butter Filling. In a food processor, combine 1.5 cups of shelled, unsalted pistachios. Process until a smooth butter forms, scraping down the sides as needed. This can take 5-10 minutes. Add 2 tablespoons of neutral oil (like grapeseed or coconut oil), 2 tablespoons of powdered sugar, and a pinch of salt. Process again until well combined and smooth. If it’s too thick, add a tiny bit more oil.
Step 3: Combine Kataifi and Pistachio Butter. In a medium bowl, combine the cooled crispy kataifi strands with the pistachio butter filling. Mix thoroughly until the kataifi is evenly coated and the mixture is well integrated.
Step 4: Prepare the Chocolate. Break your high-quality chocolate bars into small pieces. Melt two-thirds of the chocolate using a double boiler method (or microwave in 30-second intervals, stirring well each time) until smooth. Remove from heat and add the remaining one-third of the chopped chocolate, stirring until it's fully melted and smooth. This helps to temper the chocolate, giving it a better snap and shine.
Step 5: Assemble the First Chocolate Layer. Pour about one-third of the melted chocolate into your chocolate bar mold(s). Use an offset spatula or the back of a spoon to spread the chocolate evenly across the bottom and up the sides of each cavity, creating a thin shell. Make sure the sides are well-coated to enclose the filling. Place the mold in the refrigerator for 5-10 minutes to set.
Step 6: Add the Pistachio Kataifi Filling. Once the chocolate shell is firm, spoon the pistachio kataifi mixture into each chocolate cavity. Press it down gently but firmly, ensuring it fills the mold without gaps and leaves a small space at the top for the final chocolate layer.
Step 7: Top with Remaining Chocolate. Pour the remaining melted chocolate over the pistachio kataifi filling, spreading it evenly to cover the filling completely and seal the bar. Gently tap the mold on your countertop a few times to release any air bubbles and ensure a smooth top.
Step 8: Chill and Set. Place the filled chocolate molds back into the refrigerator for at least 30-60 minutes, or until the chocolate is completely firm and easily releases from the mold.
Step 9: Demold and Enjoy! Carefully pop the Viral Dubai Chocolate Bars (Pistachio Kataifi) out of their molds. Store them in an airtight container at room temperature or in the refrigerator.
