Description

Ingredients

2 cups sushi rice, uncooked
2.5 cups water (for cooking rice)
2 cans (5 oz each) tuna in oil or water, drained well
1/4 cup Kewpie mayonnaise
1-2 tablespoons Sriracha (to taste)
1 tablespoon soy sauce
1 teaspoon lime juice
1 teaspoon toasted sesame seeds, plus more for garnish
2 green onions, thinly sliced, for garnish
Neutral oil (e.g., vegetable, canola) for waffle maker


Instructions

Step 1: Cook the sushi rice according to package directions until sticky. Let it cool slightly until warm to the touch.
Step 2: In a bowl, combine drained tuna, Kewpie mayonnaise, Sriracha, soy sauce, lime juice, and 1 teaspoon toasted sesame seeds. Mix well.
Step 3: Lightly wet your hands. Take about 1/4 cup of cooled rice and form into a compact, flat disc or square, about 1/2 inch thick.
Step 4: Preheat your waffle maker to medium-high heat. Lightly brush or spray the plates with neutral oil.
Step 5: Place 1-2 rice patties on the waffle maker, close the lid, and cook for 5-8 minutes, or until deeply golden brown and crispy.
Step 6: Gently remove crispy rice with a spatula and place on a wire rack. Repeat with remaining rice.
Step 7: Top each crispy rice patty with a spoonful of spicy tuna mixture. Garnish with sliced green onions and extra sesame seeds. Serve immediately.

Notes
