Description
A fun, portable twist on the classic strawberry pretzel salad, featuring a crunchy pretzel crust, a creamy no-bake filling, and a luscious strawberry topping, all layered in individual cups for easy enjoyment on the go.
Ingredients
2 cups finely crushed pretzels (about 4 cups whole pretzels)
3/4 cup unsalted butter, melted
1/4 cup granulated sugar
1 (8 ounce) package cream cheese, softened
1 cup granulated sugar
1 (12 ounce) container frozen whipped topping (Cool Whip), thawed
1 (6 ounce) package strawberry-flavored gelatin (Jell-O)
2 cups boiling water
2 cups cold water
2 pounds fresh strawberries, hulled and sliced
Instructions
Step 1: Prepare the pretzel crust. In a medium bowl, combine the finely crushed pretzels, melted butter, and 1/4 cup granulated sugar. Mix well until the pretzels are evenly coated.
Step 2: Divide the pretzel mixture evenly among 8 (10-12 ounce) individual serving cups. Press firmly into the bottom of each cup to form a compact crust. Place cups in the refrigerator to chill for at least 30 minutes while you prepare the filling.
Step 3: Make the cream cheese layer. In a large bowl, beat the softened cream cheese and 1 cup granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
Step 4: Gently fold in the thawed whipped topping until no streaks remain and the mixture is smooth and combined.
Step 5: Evenly spoon the cream cheese mixture over the chilled pretzel crusts in each cup, spreading it to the edges. Return the cups to the refrigerator.
Step 6: Prepare the strawberry gelatin. In a heatproof bowl, dissolve the strawberry gelatin powder in 2 cups of boiling water, stirring constantly for at least 2 minutes until fully dissolved.
Step 7: Stir in 2 cups of cold water. Allow the gelatin mixture to cool at room temperature for about 10-15 minutes, or until it's slightly thickened but not set.
Step 8: Gently fold in the hulled and sliced fresh strawberries into the cooled gelatin mixture.
Step 9: Carefully spoon the strawberry gelatin mixture over the cream cheese layer in each individual cup.
Step 10: Refrigerate the walking strawberry pretzel salad cups for at least 4 hours, or preferably overnight, until the gelatin is completely set and the layers are firm.
Step 11: Serve chilled and enjoy your delightful walking strawberry pretzel salad!
Notes
For best results, ensure the cream cheese is fully softened for a smooth filling. Don't add the strawberries to the gelatin until it has cooled slightly, otherwise, they might float to the top. The individual cups make this a perfect party dessert, allowing for easy grab-and-go enjoyment!
