Ingredients
2-3 inches fresh ginger, peeled
2 cups (480ml) whole milk
2-3 tablespoons granulated sugar (adjust to taste)
Instructions
Step 1: Peel the fresh ginger and grate it very finely using a microplane or the smallest holes on a box grater. For best results, ensure the ginger is fresh and juicy.
Step 2: Place the grated ginger into a fine-mesh sieve set over a small bowl. Press down firmly with the back of a spoon to extract as much pure ginger juice as possible. You should aim for about 2 tablespoons of potent ginger juice. Discard the pulp.
Step 3: Divide the extracted ginger juice evenly between two heat-proof serving bowls. It is crucial not to stir the juice once it's in the bowls.
Step 4: In a small saucepan, combine the whole milk and granulated sugar. Stir gently over medium heat until the sugar is fully dissolved.
Step 5: Continue heating the milk, stirring occasionally, until it reaches a temperature between 70-80°C (158-176°F). Use a kitchen thermometer to be precise. Do NOT let the milk boil, as this will prevent the pudding from setting.
Step 6: Immediately remove the milk from the heat once it reaches the correct temperature. Do not overheat.
Step 7: Working quickly, pour the hot milk mixture from a height of about 6-8 inches (15-20 cm) directly into each serving bowl containing the ginger juice. Pouring from a slight height helps to aerate the milk and mix it with the ginger enzymes without stirring. Do NOT stir the milk and ginger juice mixture after pouring.
Step 8: Cover each bowl immediately with a lid or plastic wrap to trap the heat. Let the bowls sit undisturbed at room temperature for 10-15 minutes.
Step 9: After 10-15 minutes, gently jiggle a bowl to check for setting. The pudding should be set and have a firm, jelly-like consistency. If it's still liquid, it means the milk wasn't at the correct temperature or the ginger juice wasn't strong enough.
