Description
A stunning no-bake dessert made from a whole carved watermelon frosted with fresh whipped cream and berries.
Ingredients
1 large seedless watermelon
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1 cup fresh blueberries
1 cup fresh strawberries
1/4 cup slivered almonds
Fresh mint leaves
Instructions
Step 1: Slice off the top and bottom of the watermelon to create a flat base.
Step 2: Cut the rind away from the sides to reveal a cylindrical shape of red fruit.
Step 3: Pat the entire surface of the watermelon cylinder very dry with paper towels.
Step 4: Whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
Step 5: Spread the whipped cream over the top and sides of the watermelon as if frosting a cake.
Step 6: Press slivered almonds into the sides and arrange berries and mint on top.
Step 7: Refrigerate for 30 minutes to set before slicing into wedges.
Notes
Ensure the watermelon is as cold as possible before carving to help the structure hold up.
