Ingredients
6 cups seedless watermelon, cubed
1 cup block feta cheese, crumbled
1/2 cup red onion, thinly sliced
1/2 cup fresh mint leaves, torn
1/4 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1/2 teaspoon flaky sea salt
1/4 teaspoon black pepper
Instructions
Step 1: Cube the seedless watermelon into 1-inch pieces and place in a large bowl.
Step 2: Thinly slice the red onion and add to the bowl with the watermelon.
Step 3: In a small jar, whisk together the olive oil and lime juice to create the dressing.
Step 4: Drizzle the dressing over the melon and toss gently to coat.
Step 5: Crumble the feta cheese over the top and add the fresh mint leaves.
Step 6: Finish with sea salt and black pepper before serving chilled.
Notes
Ensure the watermelon is very cold before slicing for the best texture.
