Ingredients
1 baguette, day-old if possible
2 tablespoons olive oil
8 ounces (1 block) full-fat cream cheese, softened
2 tablespoons milk or heavy cream
1/4 teaspoon garlic powder (optional)
1/4 teaspoon salt
1/8 teaspoon black pepper
Assorted toppings (e.g., fresh berries, fig jam, honey, chives, smoked salmon, radishes)
Instructions
Step 1: Preheat oven to 375°F (190°C). Slice baguette into 1/2-inch thick rounds. Arrange on a baking sheet and brush both sides lightly with olive oil.
Step 2: Toast in the preheated oven for 8-10 minutes, flipping halfway through, until golden brown and crisp. Let cool completely on a wire rack.
Step 3: In a medium bowl, combine softened cream cheese, milk (or heavy cream), garlic powder (if using), salt, and black pepper.
Step 4: Using an electric mixer, beat the cream cheese mixture on medium-high speed for 3-5 minutes, until light, fluffy, and smooth. Scrape down the sides of the bowl as needed.
