Description

Indulge in these rich and creamy white chocolate raspberry truffles, featuring a luscious white chocolate ganache infused with tart raspberry puree, perfect for gifting or a decadent treat.

8 oz (226g) high-quality white chocolate, finely chopped
1/2 cup (120ml) heavy cream (heavy whipping cream)
1 cup (125g) fresh raspberries OR 2-3 tablespoons freeze-dried raspberry powder
1 tablespoon granulated sugar (optional, for fresh raspberries)
1 tablespoon water (optional, for fresh raspberries)
For coating: 1/4 cup unsweetened cocoa powder, shredded coconut, or finely chopped nuts


Instructions

Step 1: Prepare your raspberries. If using fresh raspberries, gently wash 1 cup of fresh raspberries. In a small saucepan, combine the raspberries with 1 tablespoon of sugar and 1 tablespoon of water. Cook over medium-low heat, mashing the berries with a spoon, until they break down and form a sauce, about 5-7 minutes.
Step 2: Strain the raspberry puree. Press the cooked raspberry mixture through a fine-mesh sieve into a small bowl, using a spoon or spatula to extract as much liquid as possible. Discard the seeds. You should have about 1/4 cup of smooth raspberry puree. If using freeze-dried raspberry powder, simply measure out 2-3 tablespoons and set aside.
Step 3: Prepare the white chocolate. Finely chop 8 ounces of high-quality white chocolate and place it in a heatproof bowl. The finer the chop, the faster and more evenly it will melt.
Step 4: Heat the cream. In a small saucepan, heat 1/2 cup heavy cream over medium heat until it just begins to simmer around the edges. Do not let it boil vigorously.
Step 5: Make the ganache base. Pour the hot cream over the chopped white chocolate. Let it sit undisturbed for 5 minutes to allow the chocolate to melt. Then, starting from the center of the bowl, gently whisk in small circles, gradually expanding outwards, until the chocolate is completely melted and the mixture is smooth and glossy.
Step 6: Incorporate the raspberry. Add the prepared raspberry puree (or freeze-dried raspberry powder) to the white chocolate ganache. Whisk gently until fully combined and the ganache takes on a beautiful pink hue. If using powder, ensure there are no lumps.
Step 7: Chill the ganache. Cover the bowl tightly with plastic wrap, pressing the wrap directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 3-4 hours, or until firm enough to roll. For a quicker set, you can put it in the freezer for about 1 hour, stirring every 20 minutes to prevent the edges from freezing.
Step 8: Prepare for rolling. Once the ganache is firm, prepare your coatings. Options include cocoa powder, shredded coconut, finely chopped nuts (pistachios, almonds), or additional freeze-dried raspberry powder. Place your chosen coating in a shallow dish. Line a baking sheet with parchment paper.
Step 9: Roll the truffles. Using a small cookie scoop (about 1 teaspoon) or two spoons, scoop out portions of the ganache. Lightly dust your hands with cocoa powder (to prevent sticking) and quickly roll the ganache into smooth balls.
Step 10: Coat the truffles. Immediately roll each truffle in your chosen coating, ensuring it's evenly covered. Place the coated white chocolate raspberry truffles on the prepared baking sheet.
Step 11: Final chill. Refrigerate the finished white chocolate raspberry truffles for at least 30 minutes to allow them to firm up completely. Store them in an airtight container in the refrigerator.

Notes

For best results, use a high-quality white chocolate with at least 30% cocoa butter. When rolling truffles, work quickly to prevent the ganache from melting in your hands. If it becomes too soft, pop it back into the fridge for 10-15 minutes.
