Description

Ingredients

2 medium zucchini (about 1 lb total), trimmed and sliced 1/2-inch thick
2 medium yellow squash (about 1 lb total), trimmed and sliced 1/2-inch thick
3 tablespoons extra virgin olive oil
3 cloves garlic, minced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1/2 teaspoon sea salt, or to taste
1/4 teaspoon black pepper, freshly ground, or to taste


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Step 2: Wash the zucchini and yellow squash thoroughly. Pat dry and trim the ends. Cut them into uniform 1/2-inch thick pieces (rounds or half-moons).
Step 3: In a large bowl, combine the chopped zucchini and yellow squash. Drizzle with olive oil, then add the minced garlic, chopped fresh thyme, and fresh rosemary. Season with salt and black pepper. Toss everything together until the vegetables are evenly coated.
Step 4: Spread the seasoned squash in a single layer on the prepared baking sheet. Ensure not to overcrowd the pan; use a second sheet if necessary to allow for proper roasting.
Step 5: Roast for 10 minutes. Remove the baking sheet from the oven, stir or flip the vegetables, and then return to the oven for another 10-15 minutes, or until the squash is tender-crisp and lightly caramelized at the edges.
Step 6: Remove from the oven, taste, and adjust seasonings if needed. Serve immediately as a delicious side dish.

Notes

For best results, do not overcrowd the baking sheet to ensure the squash roasts instead of steams. Fresh herbs are highly recommended for the best flavor.
