Maple Mustard Glazed Chicken

Description

A quick and easy one-pan recipe for tender chicken breasts coated in a sweet and tangy maple mustard glaze, perfect for a cozy fall dinner.

1.5 lbs boneless, skinless chicken breast halves, thinly sliced or pounded to 1/2-inch thickness
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/2 cup chicken broth
1/4 cup pure maple syrup
2 tbsp stone-ground mustard
1 tbsp apple cider vinegar
2 cloves garlic, minced
1 tsp fresh thyme, chopped (or 1/2 tsp dried)


Instructions

Step 1: Pat chicken breasts dry with paper towels. Season both sides generously with salt and black pepper.
Step 2: Heat olive oil in a large skillet over medium-high heat. Once hot, add chicken breasts and sear for 3-4 minutes per side, until golden brown. The chicken does not need to be cooked through at this stage. Remove chicken from the skillet and set aside on a plate.
Step 3: Reduce heat to medium. Add chicken broth to the hot skillet, scraping up any browned bits from the bottom of the pan with a wooden spoon. This deglazes the pan and adds immense flavor to your sauce.
Step 4: Whisk in the maple syrup, stone-ground mustard, apple cider vinegar, minced garlic, and fresh thyme. Bring the mixture to a gentle simmer.
Step 5: Return the seared chicken breasts to the skillet, nestling them into the simmering glaze. Reduce heat to medium-low, cover, and cook for 5-8 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). Flip the chicken once halfway through cooking to ensure it's evenly coated.
Step 6: Remove the lid, increase heat to medium, and simmer the sauce for another 2-3 minutes, spooning the glaze over the chicken, until the sauce has thickened slightly. Serve immediately with extra glaze spooned over top.

Notes

For an even quicker meal, use thinly sliced chicken cutlets. This dish pairs wonderfully with roasted root vegetables, mashed potatoes, or a fresh green salad. Garnish with additional fresh thyme or chopped parsley before serving.
